Healthy Baked Fajitas Recipe

Here is a healthy and easy recipe I made last night for dinner. Filling too!

This was enough for 2 people

2-3 chicken breasts cubed
1/2 cup fat free joghurt
1 cup hot salsa
2 slices lower fat cheese
2 sliced red peppers
1 sliced onion
2 cups veggie broth
2 large whole wheat tortillas

Cook chicken, peppers, and onion in the broth until the chicken is cooked and the peppers are soft. Take a tortilla, add the slice of cheese, half the salsa, the chicken mixture and then the joghurt. Wrap up the tortilla, bake in the oven at 200 until slightly brown and then consume. The fat free joghurt is a great substitute for sour cream and the peppers help fill you up.

I was pleased.
